This mix of Walichu and Kudhumi landrace varietals is handpicked during harvesting and hand sorted for unripe and overripe cherries prior to processing, then naturally processed at the Wolichu Wachu Washing Station (one of Africa’s modern sustainable washing stations, built in 2017). The Walichu & Kudhumi Coffee Varietals
The Walichu (also spelt Welichu or Wolishu) and Kudhumi (also known as Kurume) coffee varietals are well-known Ethiopian landraces. According to World Coffee Research https://varieties.worldcoffeeresearch.org/info/coffee/about-varieties/main-types, a landrace is a “domesticated, locally adapted, traditional variety of a species of animal or plant that has developed over time, through adaptation to its natural and cultural environment of agriculture and pastoralism, and due to isolation from other populations of the species. In coffee, most landrace varieties originate from the forests of Ethiopia, where C. Arabica evolved, through a process of human-led domestication. They are generally associated with very high cup quality and lower yields.”
Walichu is characterised by a tall canopy and large fruit, and most commonly found in the Gedeo zone, while Kudhumi is distinguished by its smaller stature.
Wolichu Wachu Washing Station, Ethiopia
The Wolichu Wachu washing station is located in the Guji growing region of Oromia, Ethiopia. It was established in 2017 as part of the Harso Haru Mude Farmer Cooperative. Being so recently built, the cooperative was able to integrate new commercial insights into its construction for more efficient and sustainable coffee processing. The layout of the station enables optimal efficiency during processing and drying, while the intake point lies at the top of a gentle hill with the pulping machine, fermentation tanks and washing channel below. This setup allows gravity to carry the coffee through the process, without the need for pumps like with older washing stations. The spacious and well-organized drying field lies at the bottom of the station.
