THE COFFEE BEANS

Coffee beans grown in the Todos Santos region of Huehuetenango, Guatemala, include arabica varietals like Caturra and Bourbon. The range of unique climates make growing coffee beans at altitudes possible, with altitude ranges between approximately 1,400 and 1,800m above sea level.

Caturra is a mutation of the Bourbon varietal that is short with a thick core, and plenty of secondary branches. It grows well in high altitudes. The higher altitudes produce better quality, but production rate lowers.

Bourbon is a parent to a variety of Arabica varieties, named after Bourbon Island (now known as Reunion Island) where it is derived from. It’s a short tree with many secondary branches and on average produces 25% more coffee than the Typica variety. The Bourbon variety is renowned for its exceptional sweet/acid balance.

The Guatemala Huehuetenango Todos Santos single origin coffee will work well in any brew method, it’s a superb all-rounder.

LOCATION

Guatemala is considered one of the finest coffee producers in the world, due largely to its unusual topography made of 14 distinctly different ecosystems and 33 volcanic mountain peaks.

Todos Santos Cuchumatán is a municipality in the Guatemalan department of Huehuetenango, situated in the Sierra de los Cuchumatanes at an elevation of 2,500m (about 8,000 ft) above sea level. The municipality covers an area of approximately 269km2 and is formed by the town of Todos Santos Cuchumatán, including 6 villages and 69 smaller rural communities called caserios, parajes, and cantones.

The village of San Martin Cuchumatán is the second largest urbanized centre in the municipality of Todos Santos and is also the agricultural heart of the Cuchumateca valley, which produces crops like potatoes, broccoli and large scale cultivation of coffee on the lower mountain slopes of the municipality.

Coffee starts at 1,800 and goes down to 1,400 meters where it thrives in the warmer winds of the valleys formed by the Rios Ocho.

Coffee production and export has been developed to support and educate farmers to create a positive impact on the country’s economy. In recent times, coffee has become the country’s number one export commodity.

BEAN PROCESSING

This single origin is processed with a fully washed process. The coffee cherry is pulped by a pulper machine, then left to ferment in water with its mucilage for a few days, sometimes longer. Then the mucilage is washed from the beans. This process is often used to produce a higher quality coffee, though it does require a lot of skill and a lot of water.
