ETHIOPIAN COFFEE BEANS

The Ethiopian Sidamo Chire Grade 1 is grown at 1,950m above sea level by a collection of small farmers in the Sidamo region highlands, south of the capital Addis Ababa, and the Guji-Chire region that runs along the Mora Mora River. Coffee grows wild in this region and is often referred to as “forest coffee”.

Ethiopian coffee is simply known in Western countries as Ethiopian Heirloom, as our processes of export and import don’t provide the genetic information of the beans. The Ethiopian Heirloom is known for producing clean, floral and acidity-driven coffee, with unique fruit and berry flavours.

The Ethiopia Sidamo Chire Grade 1 is a Natural processed Ethiopian Heirloom that is best suited to espresso, black coffee and filter brew methods such as Pour Over, Chemex and Plunger.

 

Tasting Notes: Blueberries and strawberries with a chocolate finish. Medium body. Soft, subtle acidity.

SIDAMO CHIRE – ETHIOPIA

Sidama or Sidamo region features an extraordinarily wide variety of coffee flavours. Many different grades of coffee are produced, and there can be striking differences in profiles from town to town. Varying soil types, micro climates, and especially the countless heirloom coffee tree varietals contribute to some distinctive flavours.

THE GREEN BEAN PROCESS

The natural method allows the bean to ferment while the mucilage is still attached. The typical processing method is similar somewhat to Kenya, with a “dry fermentation” of roughly 12 hours after de-pulping, followed by a soak of 12–14 hours in mountain water. Coffees are floated to sort for density, then soaked again for 12–18 hours before being dried in parchment on raised beds. The result is a flavour that’s much heavier and more powerful.
